How to do it:
Plug a controller in to the player 1 and 2 spots, enter the park, and on the player 2 controller press the 'Select' button ('Back' button on the XBox)
Note: You have to hold L+R and enter A,Y,Y,Y for XBox, or L1+R1 and enter X,/\,/\,/\ for PS2 at the main menu in order for it to work!
